Lucia Taco Truck at Virgin Hotels Las Vegas: The Truck Looks Better Than the Tacos

Sometimes the atmosphere sells you on a meal before you have taken the first bite. That was certainly the case with the new Lucia Taco Truck at Virgin Hotels Las Vegas.

Vegas Knows How to Get Your Attention

When I checked into Virgin Hotels Las Vegas, one of the first things that caught my attention was the Lucia Taco Truck.

It is difficult to miss. The bright red paint, oversized glowing TACOS sign, custom wheels and lowrider-inspired design immediately make it look like one of the coolest casual food stops in the hotel.

The truck was custom-designed by Las Vegas-based Count’s Kustoms and officially opened in July 2026 as a stationary grab-and-go extension of Lucia Mexican Grill. The menu includes tacos, burritos and burrito bowls with several meat and vegan options.

It is an impressive presentation, and that presentation immediately creates an expectation: If the truck looks this good, the food must be amazing.

Unfortunately, that was not my experience.

A Convenient Dinner Without Leaving the Hotel

Our group decided not to go out for dinner that evening, so this seemed like an easy option. It was located right inside the resort, it was open late and the setup had already caught my attention the night before.

I ordered two tacos and a bottled Mexican Coca-Cola. The total came to approximately $18.

For a quick meal inside a Las Vegas resort, the price itself was not especially surprising. The problem was that the food did not come close to matching the presentation.

    The Tacos Were a Letdown

The tacos did not look particularly appetizing when I opened the foil, and they did not improve once I started eating them.

The meat and toppings were runny and watery, which quickly soaked into the tortillas. By the time I picked them up, the tacos were extremely wet and difficult to eat.

I will acknowledge my own preference here: I generally do not care for corn tortillas, and corn tortillas were the only option offered during my visit. But personal preference aside, the larger problem was the texture. The tortillas were soggy, the filling was watery and the overall flavor simply was not very good.

For something presented as a premium new food experience, it felt more like an ordinary takeout taco that had spent too much time sitting inside its foil.

The Mexican Coke Saved the Meal

The unexpected highlight was the Mexican Coca-Cola served in the glass bottle.

That first sip was a complete blast from the past. It tasted like the Coca-Cola I remembered drinking during the 1980s, before the flavor seemed to change into what we commonly get today.

For a few minutes, the drink was more memorable than the meal. I would absolutely order the Mexican Coke again.

The tacos, however, would be a pass.

The Pags on the Go Verdict

The Lucia Taco Truck is visually impressive. It is colorful, creative and perfectly designed to make hotel guests stop and take a closer look.

But this experience was also a reminder that great presentation does not automatically mean great food.

During my visit, the tacos were soggy, watery and disappointing, especially considering that two tacos and a Coke cost approximately $18. Your experience may be different, but based on what I received, I would bypass the truck and choose another dining option.

That should not be difficult. Virgin Hotels Las Vegas lists several alternatives, including Kitchen Express, which serves lunch and dinner until midnight, and Pizza Forte, which is advertised as being open 24 hours.

The Lucia Taco Truck is officially open from 11:30 a.m. until 10 p.m. Sunday through Thursday and until midnight on Friday and Saturday.

The truck may be worth stopping to photograph. For the food, I would keep walking.
